A classic British summertime favourite

I love strawberries and always get excited when the first of the local ones become ready to eat, and if you’re feeling very adventurous you could even pick your own; that really does bring you back to childhood memories and probably eating more in the field than you actually end up with in your punnet at the weighing scales. Just make sure you give your face a quick wipe before going to pay.

They really do scream out British summer time and are always a fantastic seller in the restaurant. This really is the easiest month time in the kitchen to cook as you really do have the best of local produce easily available from asparagus, potatoes, peas, gooseberries, blackberries & samphire. We currently have this dessert on both menus at the King’s Arms in Fleggburgh & Kindred’s in Wymondham and it is proving to be very popular. It’s a bit more technical than your average strawberries and cream, but all the classic flavours are there, as every dish we put on the menu we try to get as much out of every flavour and element that goes onto the plate.

You could even swap the strawberries to raspberries as again everything would work just as well if you prefer my other favourite fruit. So give it a try. Perfect for a dinner party as all of the bits can be done in advance.
