The Mill Hotel is a beautifully converted water mill situated on the banks of the picturesque River Stour. This historic building now boasts a completely refurbished contemporary interior.

The merging of the old with the new, together with The Mill’s imposing façade and stunning views guarantee a real wow factor for visitors and guests. The hotel has 62 en-suite bedrooms, a 72-seater restaurant, private meeting room, bar area with 2 log burners and a terrace for al fresco dining overlooking the breath-taking Suffolk Countryside.

Executive chef Daniel Collins joining The Mill has an excellent reputation for his innovative, signature style.

Starting his career at the Rose & Crown in Colchester, Daniel has travelled through the Weald in Kent and country manor hotels utilising fresh local produce, before heading into London for 28 years, at one point being one of the youngest head chefs in London at 24, working on 4 & 5-star properties from award-winning hotels such as the Rubens at the Palace, and the Milestone Hotel, opening the Library restaurant where he won his first Rosette in its first year, and then the second soon followed!

Daniel has gone full circle and opened Greyfriars Colchester, an 18th-century luxury hotel and now is looking forward to great things forward at The Mill Hotel, which has already been awarded an AA Rosette for its culinary excellence for the last three years.

The Mill’s reputation for fine food has made the restaurant a popular choice with local diners and guests alike for many years. Quality produce, sourced primarily locally, is used when in season, and diners can choose from a range of menus. Classics which feature regular favourites and seasonal à la Carte selections.
